Spicy Chicken and Rice bake!
I found this 1 litre pressure cooker and thought I'd give it a try... Sauteed the veggies in the pot first then added the rest of the ingredients except the cheese and green onions. Took a guess at the right amount of liquid amounts to get the rice to cook fully but not leave the dish too dry. Got lucky and it turned out perfect. Poured it into a lasagna dish, topped with cheese and baked it in my toaster oven to melt the cheese then topped with green onion. Took 20 mins from start to finish... will definitely make again!
This dish weighed in at 20 oz so it could be made for two and served with a side salad.

Mediterranean Chicken Grill with pesto mayo, feta, roasted red peppers and romaine lettuce on a pizza sub roll. I used to make this in my restaurant on homemade focaccia bread and spinach instead of romaine and it was my number one selling sandwich.

Breakfast Bake... mix it all together, set toaster over to 200F and left it for 45 mins while I had a morning workout, turned it up to 300F for 15 mins to finish it off and topped with chives... Easiest breakfast ever!
