Onion Carrot and Ginger Soup

A simple and tasty fat free vegetable soup.

Ingredients

Directions

  1. Slice onions, peel carrots and dice ginger.
  2. Add stock and season to taste.
  3. Boil for about 30-40 minutes.
  4. Puree in a blender and enjoy a no fat soup.

I liked this recipe. Filling and decent on it's own. I did find that I wanted to add some seasonings/herbs to help boost taste/flavor. Wish I would have noticed the comment regarding adding additional ginger, definitely would have done that.

Yum! I used low sodium chicken broth and it was absolutely awesome!!

lord have mercy, too much sodium from the dry cubed chicken stock. Better to bet a liquid sodium free stock or boil down your carcass and make your own.

this is super tasty and so little clories, love. I put in a bit more ginger, double yhe amount, because I like spicy food and tossed a bit of feta cheese on top.

I didnt like this, the ginger was too overpowering. Not sure if i was supposed to use fresh ginger or if they even have it in the spice section. so it could have been my mistake.
