A quick and easy meal that's a nice change from beef chili.
Ingredients
Directions
- Cook chicken and onion in olive oil until chicken is cooked through.
- Stir in beans, broth, chilies, cumin and cayenne pepper.
- Bring to boil. Reduce heat to medium-low and simmer for about 15 - 20 minutes.
- Serve topped with shredded cheese and cilantro.
- Enjoy!

This is not Atkins friendly in any phase! Maybe if you leave out the beans and use full fat cheese, if would be OK.

Really tasty and filling! It seems a little light bland when I double the recipe, so I tend to add a little Kosher Salt. I think I'll also do 'hot' green chilis instead of the 'mild' to liven it up a bit.

I have made this exact recipe for years. The only thing I do differnt, is add about 1/4-1/2 cup whipping cream to pot right before serving, depending on how much I am making. So good topped with colby jack and fat free sour cream. Yummy!!

Omitted chilies and added 3oz of tomato paste - a variation of cassers122 suggestion - no splenda. Absolutely loved it!!

I made this recipe with light red kidney beans instead, and it was phenomenal. Just put one jalepeno in, instead of trying to figure out what 4oz of chiles is. It's very hearty and healthy,and not bad mixed with a little rice.

This is an amazing recipe! I took it a notch further and added tomato sauce and splenda - phenomenal!

I would cook the chicken breasts in water to make my own broth and skip the olive oil.

I always top with low fat sour cream and red pepper flakes. Yummm!
