Today was a complete disaster, food-wise. Spent the vast majority of the day on the road and made a few choices that weren't the smartest. Take breakfast, for example. The egg and bacon breakfast taco wasn't a bad option considering I was eating on the road. The vanilla latte, on the other hand, not such a good idea.
Didn't have time for lunch and dinner was limited to Panda Express. I was able to withstand the temptation of fried rice and chow mien, and instead opted for sweet fire chicken (which was breaded and in a sweet sauce) and beef broccoli.
In short, carbs galore. Hope this doesn't set me back to terribly much.

The guilt and shame is overwhelming.

This morning was somewhat of a surprise. I wasn't hungry this morning, so I didn't eat breakfast and had lunch around 2:30 this afternoon. I was just a little hungry for dinner and had a a few lean strips of brisket, a small salad with ranch dressing, green beans and a few slices of cucumber. So all in all, not bad.
I did have to up my fat content a bit to keep the macro ratios in line, and I've found that sipping a couple of tablespoons of heavy whipping cream gives me the satisfaction of a bit of dessert. Reminds me of ice cream.
At this moment I have barely reached 1,000 calories and have absolutely no appetite.

I've decided to ease my way into keto, by working with foods I'm comfortable preparing - which means a lot of Tex Mex influences. One of things I've done is cut out the obvious carbs, things such as corn/flour tortillas, grilled corn, rice and beans. For instance, today we had beef fajitas. I simply had the grilled skirt steak with grilled onions, bell peppers, zucchini and mushrooms. Topped it off with a generous dollop of guacamole and a glass of unsweetened ice tea.
I've also decided to incorporate more fat by preparing my coffee with heavy whipping cream and forgoing my usual milk and sugar.
I'm happy to say that my headaches have eased up tremendously, although I still feel a touch sluggish. I also notice that I'm not really hungry, so it's easy to resist the temptation to snack. That's a win in my book.
Tomorrow I plan to hit the gym and start off on the treadmill for as long as I can handle it. Hopefully, I'll be able to get a couple of miles in to start. Just want to note that my cardio will consist mainly of walking with a bit of elliptical thrown in. I have a medical condition that does not allow me to run or even jog. In a couple of weeks I plan on doing a bit of light strength training.
