I woke up this morning so thirsty. As I said yesterday, I had slacked off on the H2o. Today I used intentional thinking and I have had 4 24 oz. servings (96 oz) plus whatever was in my coffee and tea. My son has started a weight training effort and is trying to keep his electrolytes balanced with Gatorade. I make it from powder for him. So between my water intake and the 3 quarts of Gatorade I've mixed for him, the water cooler has been tapped aplenty today.
My favorite thing I am eating lately is shrimp I cook in a garlic-infused butter and olive oil mix. I put mashed garlic in the oil in a skillet and heat it until the raw smell leaves (a minute or so) then melt the butter in there and pull it off the burner. I let that sit for at least a half hour for the flavors to marry then when I'm ready to cook supper I heat it up to medium high and throw the shrimp in for four or five minutes. I've been fixing frozen artichokes with that dinner, so I mix the chokes and shrimp on my plate and sprinkle all with shredded parmesan. Talk about good. I do not even miss my rice. The parmesan seems to act like rice, kind of adheres to the rest. Ok, enough of my food 'gasm.

Sleet/snow/rain has shut down the Triangle. I love the quiet and the lack of compunction to be out and about. Have food and firewood. Yes, food that is on plan! Not nacho fixins, (or chili) and hot cocoa, get your minds out of the food gutter! I'm feeling a little plump today, have to admit that I have not been drinking my water for the past couple of days. I will course correct that this weekend.

I went to my primary care doc today for a scheduled visit. I told him that the GYN he had sent me to had put me on Atkins. He acted taken aback and pulled up my blood work from my visit with her. (She had thought I might be insulin resistant since my belly was so round.) My blood work shows I am miles from being diabetic or pre-diabetic. He opined that the Atkins diet didn't seem to be a sustainable way of eating. I gave him an education update on what the Atkins plan is today and shared some examples of what I eat. He was wowed. (He thought that it was an all-meat diet still.) Anyway I have lost 12 pounds and told him that when I see him in six months I will be skinny. So now I am motivated to be right! hahaha

Stressful week. Interestingly enough, I reacted by eating less. So due to lower calories in my diet and hyper nerves, I lost weight. I don't plan on staying stressed so my weight may creep back next week. At any rate, it was nice seeing that number the past two mornings! This way of eating has got a grip on me, in the past i would have gone for potato chips the minute the blank hit the fan. Thank you Lord for giving me strength and removing those desires from me.

Rained like the Dickens all afternoon and into the evening and then turned to snow. It was beautiful to watch illuminated by the porch lights and street lamps in the distance. There is a stand of bamboo in my neighbors yard behind me (fenced) and the weight of it made one of the tallest bend all the way to my back deck. I looked out one of my doors and only the ginormous greenery of the head looked like a dinosaur looming towards me. I almost dropped the phone. It was Jurassic Park bamboo style. hehehe (I was instructing my son how to properly cook thick pork chops. Yay he likes reduced for quick sale items!).
