My daughter betting me I can't do tricks with my tongue!! Anyhow, I just finished watching "What The Health" on Netflix... I'm going to try eating a plant based diet... call me crazy but I'm on a quest.. a health quest. I will try my all,to get it right!

If you like tacos...and you like mushrooms/cauliflower, chop the two and season like tacos...they make a great 'taco meat' filling. :)

It is an interesting documentary--gets you thinking. I've been eating mostly plant based and increasingly so on this journey. I started gaining some back when I was eating more animal proteins this winter and spring. Back now to almost strictly plant based. I feel so much better on a plant based plan.

I think you have to know what you are doing to go entirely plant based successfully. My only advice is to be certain that you are eating a complete form of protein to support tissue maintenance and repair (I.e. beans are not a complete protein) and enough grams per day to not be losing lean mass. I'm guessing this will involve eating a lot of carbs or soy but I don't know. I haven't spent any time looking into it. I hope you let us know what kind of solid info you discover. 👍

I ate strict vegan for a while, mostly to force myself to learn about how to do it right and enjoyably. What a learning curve! It's easy to fall into eating a lot of processed foods; I developed a tiramisu recipe that was entirely vegan, but required several different forms of processed soy. Was running and swimming distances at the time, and felt fantastic. --- Current gospel is that you don't have to get complete proteins in one meal, as long as you consume the right elements during the day or within a few days, but I consistently felt much better when I ate the right combinations at the same time. You'll figure out what works for you. ---Sprouting legumes before cooking them worked really well for me, as did soaking brown rice overnight before cooking. Beans, I liked a lot better cooked from fresh dried beans, than from a can. I did supplement B12.---Most of all, beyond getting the basics in place, enjoy!

For water politics reasons, I'd like to move away from eating so much animal protein, at some point. But I'll need to be a lot more active. Looking forward to see how you do on this approach! Oh, beans, there's an article somewhere about how to adjust to eating them. If I find it, I'll send it your way.

Here is an interesting article on why that way of eating works well for some and not well for others. https://authoritynutrition.com/4-reasons-some-do-well-as-vegans/ It does not work for me.

Thanks, Officially39! (Great handle, too.) -- Jeni I can't find that article right now, but it suggested starting with just a bite of beans per day, chewing them very thoroughly, and ensuring your probiotic intake is sufficient. It advised against taking enzymes, as this could inhibit your body from increasing its own production. I didn't dig into the science they purported to base this on, but it worked for me last year.

Get the book "Laurel's Kitchen" it is much more than a cookbook. It is a wealth of knowledge on nutrition and meeting nutritional needs on a vegan diet. I still have it, read it and use the recipes.

Thank you all! Looks like I'm going to have to do a lot of research... I've only done low carb high fat my entire life, so this may be a challenge. I love a challenge!!

McDougall, M.D. (with his nutritionist wife) has done the research over his 40-year career in medicine, with thousands and thousands of patients, showing that vegan whole-food/starch-based/no-added-fat WOE is healthful and health-restorative, and can be delicious. His books fully explain the science and provide lots of recipes. (He recommends vitamin B-12 supplementation when vegan for 2 years or more.) I did it for 6 weeks a couple of years ago, felt great, reduced my HTN/T2DM/anti-inflammatory meds, and lost 15 pounds, but I wasn't in the frame of mine to maintain the discipline. Plus, many recipes use tomatoes and I got sick of them!

Wow miraculum!! That makes me doubly excited! After eating mostly meat, cheese and protein bars/shakes for the last 2+ years, I am welcoming the idea of fresh foods whole heartedly!!
