I'm basing my eating plan on the book by JJ Virgin called THE VIRGIN DIET. She's a nutrition and fitness guru and has some good suggestions about how to do an elimination diet. The foods to eliminate are frequently implicated in food intolerances. I'm still in the 21 day elimination phase, although I must admit I haven't been completely true to the diet 100% of the time. I also read the book Wheat Belly, which describes the changes that have been made to wheat over the years causing all kinds of problems with metabolism. I'm slowly figuring this thing out and trying to tweak what I eat. It kind of sucks eating puffed rice cakes and almond butter for breakfast when I'd rather have toast with butter and jam. But I like how I feel. So I guess I'll persist. A nice consequence of all this, besides feeling better is, is that I've lost a few pounds. We'll see how this goes.
