Chicken onion soup with cheese, shallots and chives.
Ingredients
Directions
- Heat oil in a large saucepan over medium-high heat.
- Add onions; cook 5 minutes, stirring occasionally.
- Stir in 2 sliced shallots and white and light green part of leek, sliced.
- Continue cooking until golden brown, about 5 minutes.
- Add stock; simmer uncovered about 15 minutes.
- Season with salt and pepper if desired.
- Ladle into shallow bowls; garnish with cheese and chives.
