Great taste, low calorie and fast.
Ingredients
Directions
- Cut chicken into 1/2" cubes. Cook over medium heat, 6-8 minutes, set aside.
- Heat skillet to medium-high. Add garlic, sauté 1 minute.
- Add zucchini and mushrooms, sauté 2-4 minutes until tender.
- Add picante sauce, salt and chicken to mix. Bring mixture to a boil, reduce heat and simmer for 3-4 minutes.
- Serve over whole wheat noodles or rice.
- Note: your choice of mild, medium or hot picante sauce can really spice things up!

My teenage son who NEVER eats veggies, ate this. That is truly a miracle! I also would use a cauliflower faux rice.

for Paleo, I'd leave out the salt, and serve over cauliflower or just eat it straight.

My husband thought it needed more spice so he added hot sauce I thought it was wonderful as is.
