Texas Caviar

A delicious healthy appetizer or side dish with black beans, corn, peppers and tomato.

Ingredients

Directions

  1. Drain corn and black beans.
  2. Chop pepper, tomato, onion and cilantro.
  3. Combine all ingredients, add dressing.
  4. Chill for 2 hours.
  5. Not: serve with tortillas chips or use as filler for quesadillas.

A friend of mine made this for a party we went to a couple of weeks ago and it is FANTASTIC!!! So simple and so delicious!

I make this all the time but I also add black eyed peas & avocado and frozen corn instead of canned. My kids LOVE it! We take it everwhere!
