My spirits were down temporarily (when I wrote my last entry), but I've kept my focus and managed to stay pretty true to my dietary changes. I had one dessert all week - a taste of marionberry crumble and french vanilla ice cream. It was yummy but I haven't been eating sugar, so I could only eat a few bites. I've stayed committed to eating at least 1 pound of vegetables per day, and am targeting 60g fat per day as well. I've managed to stay with the veggies, but having trouble with the fat goal. The fattiest foods I've been eating has been eggs, but oh boy is it hard to stay under 60g per day. Came close yesterday, though.
My stomach has flattened considerably, I've lost a good deal of my belly fat, and my "love handles" are almost gone. The progress is exciting. To make things even more happy, my trainer said he can really tell I've been working on my form, and I should start to see some serious body changes soon. He said I've reached the stage where my training is going to start directly impacting my body's appearance and I should see some dramatic changes soon. Don't know what he's talking about, I'm already seeing changes. My freakin traps are getting huge and my arms are too big for most of my shirts, my shoulders are significantly rounder and fuller, the change is visible. Even better, my chest has gained over an inch and my girlfriend is loving it. This morning, she was sleeping with her head on my chest and said she loved how firm I was now. I purred like a damn kitten.
And my lower back pain has gone away. The trainer says it was definitely caused by using my lower back when dead-lifting. Thinks I'll be fine, my back muscles will strengthen and my form will improve, but I'm not bad enough to do any long-term damage. Good news there.

Was feeling frustrated after meeting with my trainer yesterday. He keeps telling me I'm getting too many carbs, too much fat, not enough protein. But I'm only eating whole foods, and it takes tons of whole foods to equal any calories, to the point that even a tablespoon of olive oil can throw off my whole day.
My girlfriend said she is concerned that perhaps I'm trying too hard or becoming obsessive. I'm looking to make a permanent life change so I don't want to go overboard. Trying to find a balance.
So this morning, I added some oatmeal and ate 2 cups of frozen spinach with my eggs. In the past, I've been eating 1/4 cup oatmeal per morning. Now I've upped it to 1/2 cup, which is hard to eat with the 4 eggs and 2 cups of spinach (a lot of food), but has definitely helped with my energy and got my breakfast calorie total up to 539.
Because I'm trying to put on muscle, I need to keep focused on getting enough calories. I like to workout hard, so will need the nutrition to keep me chugging. Have meeting with trainer again today, hoping I get my ass kicked as hard as yesterday. Got a great workout and although my lower back was somewhat sore, didn't need ibuprofen and think the soreness is probably muscle-related (I hope).

Time to get serious.
I started working out with Victor (my trainer) on April 21st 2011. My body fat at that time was 25%. I've dropped 3% body fat in the last month by weight-lifting 3x a week, with some cardio thrown in a few times a week. However, I was totally ignorant about how to eat. Victor says 70% of my progress will be based on my diet, so this is my attempt to improve.
Victor has given me some general guidelines to go by, and a ratio of protein (30-35%), fat (20-25%), and carbs (40-45%) as well as a daily caloric intake limit (2200 cals per day). Following this diet, I am hoping to lose an additional 3-5% body fat by June 25th, 2011. My long-term goal is to reach 12% body fat, and I realize this will take a while.
