Okay, there has been a discussion on Atkins on Facebook about different ideas for MIMs and someone had said that they added 1/2-1 tsp. of sugar free jello (flavor of your choice) to their MIM and it was good. So I decided to try it today. I am telling ya...YUM!!! I tried 1 tsp of orange jello. I really, really liked it. Talk about feeling like you are cheating! I used the jello in place of the cinnamon. I want to try lemon next to see if it will taste similar to a lemon poppy seed muffin. I also want to try strawberry. It is a good thing I am at work and not at home or I would be trying them all right now. LOL

Muffin in a Minute. They are a life saver on Atkins. I have one every morning for breakfast, or at least 6 days a week. They are made of flax seed meal and have alot of fiber in them. You should be able to find it under recipes here. But I highly recommend searching the forums and group discussions. There are a lot of ideas of how to add ingredients to change them up. Also go to Atkins. com or like I said the Atkins on Facebook has some great discussions on MIMS right now.

I can't find how to enter dry jello mix on my food diary, but I guess that is okay since it has no carbs in it and I know it has very little calories and we shouldn't have to watch the calories too much anyway on Atkins. It is actually better than my cocoa MIMS because the cocoa I add has .54 carbs in it.

Susie-don't feel too bad it took me a couple weeks to figure out what a MIM was. Everyone kept talking about them and I couldn't figure out what they were. LOL

MIMS=Muffin in a Minute. It is a muffin made of flax meal and you can cook it in the microwave for one minute. Here is a page on Atkins.com that has the recipe along with some twists. I usually add about 1 tbls. of pumpkin and 1 tsp. of sour cream but it takes closer to 1 1/2-2 minutes to cook. Or I add 1-2 tsp. of cocoa and 1 tsp. of sour cream for 1 minute. But the one I had this morning with sugar free jello was really good. Spread some butter or cream cheese on them. They are great because of the fiber which is difficult to get enough of on this diet plus they are really filling. There are ideas out there for savory ones too with garlic and other seasonings. The recipe is on this site so it isn't hard to enter into your food entries. Just don't forget to enter whatever you add also so that you have the right carb count.
