Tried my hand at making a keto-friendly cheddar mug cake because I wanted a little savory bread. Hubby was sweet enough to have picked up a bag of almond flour this weekend, so this worked out perfectly. Since I've never used almond flour before, I must admit to being pleasantly surprised.

I mix 50/50 with flax meal for more fiber and a little 'tooth'.

This is a fairly simply recipe that I tweaked from ruled.me. Combine 2Tbls. softened butter, 3 Tbls. almond flour, 1/2 tsp. baking powder, 3 Tbls. shredded cheddar and one egg in a microwave safe mug. Nuke on high for 75 seconds. Tap cup lightly on counter to loosen cake and invert onto a plate. Cool for a minute or so before digging in. It's easy enough to tweak to fit whatever other things you may have on hand -- bacon, chives, etc.
