I made "Pork Egg Roll in a Bowl" for supper. If you are low carb (or if not) and you like the flavors of an egg roll but don't want to eat the wrapper, you will LOVE this! Got it off of "peace love and low carb website. It makes 4 servings, I ate 2 for supper....the rest for tomorrow!

I made this for dinner a few nights ago and have brought leftovers for lunch for 2 days, I will definitely make it again. I love Chinese food and this will keep me on track while still getting the BEST part of an egg roll.

This is a favorite in our house, even though husband is not keto/low carb. Another version he likes even better is cabbage, beef, diced tomato, tomato sauce, chopped onion, garlic for unstuffed cabbage roll casserole. Also good just to fry up shredded cabbage with some bits of bacon and a tiny bit of diced onion for flavor.
