Hope everyone is enjoying their weekend! This week has been really tough for so many reasons. I have done really crappy at recording my food and exercise. But hopefully that will all change next week. I have however been baking and cooking up a storm lately. So many yummy and easy on my tummy vegan recipes out there. I never would have guessed that you could make tofu taste so good. Anyways during the last week I have made... Fried cheese flavoured tofu, fat free vegan apple banana muffins, vegan pudding, buscuits, and pancakes. It's shocking on the carbs, but I am retraining my own body on eating homebaked goods! Plus I also find it enjoyable again. This weekend on the menu is vegan lasagne with tofu and spinach, and high fibre cereal bars to take to work. This experimenting is fun, specially when you can take a basic recipe tweek it and call it your own!
So other then my food I have done some good things for myself! Like walking everday back and forth to work and setting up time challenges when I am bored! Also doing simple exercises in the morning to basically wake me up at 4:30am! Plus I have been busy at work too! Which helps the days go by much quicker.
There may hopefully be a break in the stress, funky mood cycle. Right now I'll. Take whatever small window that is presented to me!
