Easy peasy…. I don’t actually have a recipe but….
1 can light chunk tuna in water, drained.
Mayo.
Finely Diced red bell pepper, celery and green onion.
Tomato.
Cheese slice of your choice, I use marble.
And whole grain bread (or English muffin).
Cracked black pepper.
Mix tuna, mayo, pepper and veggies to a tuna salad consistency.
Lightly toast bread.
Place a slice or two of tomato on bread and heat under a broiler for a minute or two to warm tomato.
Spread tuna mix to edges of bread and repeat heating. Cover with cheese and heat under broiler until cheese is melted n bubbly.
Makes 3-4 tuna melts on bread or 4-5 on English muffin.
