5/23 Fasting blood sugar 6.4 mmol/L When you realize it's gonna be one of those sort of days...woke up 3 different times over the course of my sleep, went to make coffee but forgot to put the instant coffee in the mug, re-reading the carb level on my PC Poblano & Lime BBQ sauce and wtf?!? - another recipe I need to re-invent. Yup, gonna be one of those sort of days. 1st meal of the day is 2 homemade Scotch Eggs served with 1/2 serving of Poblano & Lime BBQ sauce and 1 tbsp of Cows Creamery Sea Salt Butter from PEI. I'm guessing on the ground beef used for it because I didn't measure...lol.

Aw sorry about your sleep, that's always annoying! Those scotch eggs look amazing. I've never had one but the concept sounds delicious.

They are super easy to make and one can add seasonings to it or not. All I did was take 2 lbs of ground beef and whizzed them in my food processor. Boiled up some eggs, peeled them then pat them dry. Next I wrapped a bit of the meat around the hard boiled egg and then cooked them in the oven for about 30 minutes at 350F. Let them cool & store them in the freezer till ready for use.
