I’m plant based and love cooking quick meals. My go-tos: veggie tofu stir fry with rice or vemecilli noodles + peanut soy sauce, pasta with marina sauce and lentils and veggies, quinoa and pan fried veg, rice and beans and over roasted yam, over roasted veg + cous cous or quinoa, curry with rice. I always make lots so that I have leftovers for the next couple days and don’t need to cook dinner every single day!
