I am sitting at my kitchen table trying not to feel guilty for indulging in a veggie and cheese omelet while catching up after being MIA all week. Just really busy. Now that it is cooling off I am hoping to start traveling less and get caught up on the personal things I put on hold. Too bad you can't catch up on exercise and eating right. I must be doing something right because I couldn't eat the whole inlet. Dogs are happy though because I was able to share it with them.

I believe I have eaten better this work season because I took fruits and veggies with me and stopped at fast food less. One win for me. However since July I have slacked off on exercise with the exception of swimming. So this week I am renewing my commitment to myself and my exercise program. I started off strong and did 30 minutes of toning and fat burning and some yoga. Today is just cardio and yoga. I am going to try and run on my elliptical for an hour while I watch the nascar race. Tricky part getting my butt off the couch.

Daughter I up so gotta go! Check in tommorrow.

Veggie and cheese omelet sounds great and it's healthy, why would you feel guilty?! :-) Have a great day Kathy.

I was just thinking the same thing as long as you used some low calorie butter or the o calorie butter spray or Pam. That sounds very healthy I need to do a omelet instead of oatmeal every morning.

I do use low calorie margarine as I don't care for the taste of butter.

I have dropped low cal margerine out of my diet, replaced it with Kerrygold butter occasionally. Nowadays I use coconut oil with my egg omelets - a little goes a long way and it doesn't burn when heating it up. I usually bake my omelet in the oven - super easy, thaw some spinach, beat egg, add salt and pepper and cover with a teaspoon of Parmegiano - I have a small pie dish and it is a really good recipe which TX Snowman had posted on FS - I vary it with any veg I have- it is simply delicious and i just lightly spritz the base with coconut oil to prevent sticking.
