Hey RichDeegs!
I've always found it quite easy.
I take a large pan, filled halfway with cold water. Bring to the boil on the stove. I never add salt to the water as it toughens the egg whites.
Then, once boiling, working quickly, use a spoon/flat whisk to create a whirlpool in the centre of the pan.
Have ready 1 or 2 eggs, together in a small cup, and immediately, gently slide them into the water. The yolks will look like they're being flung out to the edges while the white looks feathery and disgusting, but it will be ok!
Set your timer to 4 minutes, turn the heat to the lowest, and wait! After that time, the eggs will have joined together somewhat. There may be feathery bits of white but not much at all.
Using a slotted spoon, carefully cut the eggs apart and then drain them on the edge of the pan. Slide carefully onto your toast and breakfast is served!
Now lots of people use vinegar in the water. The acid helps the whites to coagulate so they set nicely. My mum and dad HATE the smell of vinegar so I had to devise a way to make perfect poachies without vinegar! This works really well for me, every time!
