@Tosh Melody I make it in the instant pot (seriously one of the best creations ever) using the amounts and times from this recipe...

...but I end up using about 3x the curry powder, onions instead of shallots (because I always have them on hand), more cayenne, and ground ginger (again, because I have it on hand). It's definitely not authentic per se, but it's easy, cheap, and yummy! I typically get 3 large servings out of it. Man, now I'm hungry again.

You're welcome! And I hadn't either, especially because it would be pretty easy to overcook them in an IP I would think. The times and liquid amounts in this recipe end up cooking them perfectly (for me, anyway).
