I have amaranth in my cupboard but have never tried it !! Is it good? Any hot tips about it ?

I love it! First time cooking was in a too small of a pot. Boiled out and it "pops" like popcorn. It was a hot mess everywhere. It has a flavor like fresh corn on the cob.
