Doesn’t look to appetizing but it’s my favorite go-to right now. 1c asparagus (cut to 1” pieces) sautéed in olive oil with garlic until the flowering part is crispy add 1.5c couscous and scramble two brown eggs (higher carotenoids) to top it. 😋🤤

If you have both white shelled eggs and organic a brown, crack them both and you’ll see the difference in the yolks. Carotenoids are responsible for color, and the white shelled yolks are almost pale compared to the brown. #themoreyouknow 🤷🏽♂️ Lol
