Mom and my aunt stopped by yesterday, dropping off fresh beets, potatoes and carrots. I think there's something else in the other bag in the crisper (I never looked last night as I was SO excited over REAL carrots!), but i will check that out tonight. Anyhow - I made a fantastic vegetarian chili and did up some red potatoes. Then I ate the - vegetarian chili. Which explains why cycling SUCKED last night. My legs felt so tired. A mainly protein dinner, coupled with a lunch of protein (split pea soup) means tired, depleted leg muscles.
So today - spicy rice & beans! My favourite work lunch - equal portions of brown rice, rinsed canned kidney beans and salsa and lots of pepper. And salt - good thing my BP is so low because I could never give up my salt. My mom tells me I should be dead, it's so low...
