How do you make cauliflower rice? I would like to try it. Thanks

@Stepbench - I make it just like I used to make pasta salad. I cook the cauliflower rice and let it cool. Then I cut up onions, sweet peppers, black olives and carrots (or whatever veggies are onhand). I make a dressing with white wine vinegar, olive oil, garlic powder, onion powder, crushed red pepper, oregano, salt, pepper, and thyme. Toss it all together and mix in a bit of grated parmesan cheese. The taste you get is "pata salad", but without the extra 220 cals from pasta. I've used cauliflower rice in a couple of my old recipes like this now and I find it works well. And this is coming from someone who HATES cauliflower by itself. I actually think my Mexican rice is better with cauliflower than rice. It ends up a bit sweeter because of it.
