My mutton were fat. conventional butchery would grade at H, overfat. Fat is good, for me. Lots of cpure, clean concentrated energy, with little bulk and hugely satiating. 13 &14 years old pri itive breeds including North Ronaldsay, Shetland and Ryeland. 100% grass fed and fi ished, no veterinary medicines or interventions and killed at home. Perfect food for mw - natural wholesome meat, as good as it gets, and absolutely delicious. Can't get more local than my own field...
