50g butter
1 medium white onion diced
2 garlic cloves finely chopped
1-2 tbsp medium curry powder
1 medium cauliflower cut into florets
800 ml of water
1 knorr vegetable stock pot
1 200ml tin coconut milk
200g cream cheese
4 tbsp chopped coriander
2 green chillies deseeded and sliced
sea salt and cracked black pepper to taste
Sweat off the onion in the butter over a low heat until lightly golden in colour.
Add the chopped garlic and fry for another minute.
Stir in the curry powder and cook for a couple of minutes.
Add the water and the stock pot, increase heat and bring to the boil.
Add the cauliflower florets and cook until just tender.
Stir in the coconut milk and cream cheese.
Remove from the heat and add the green chillies and coriander.
Allow to cool for 10 minutes and then blend well until creamy and smooth.
Season with salt and pepper.
this makes a thick and satisfying soup but you could add a little more water after blending to adjust the consistency ( it will also depend on the actual size of cauli )
Also you can adjust the amount of chillies depending on your tolerance to heat. this made a fairly mild soup but I garnished it with some Korean red pepper flakes for some added spice and a few mizuna leaves. You could also garnish with toasted almond flakes or toasted coconut flakes for some added texture.
